Battered Sage Chilli Chips

A delicious snack or a perfect garnish. VEGAN

Ingredients:

  • Sage leaves, as many as you want.

  • Plain flour, about a cup.

  • Water, adding bit by bit.

  • Hot sauce (Caprica Chilli Sauce), a splash.

  • Oil (vegetable).

Method:

  1. Rinse sage leaves and put aside.

  2. Combine water and flour to create a smooth batter.

  3. Whisk to remove lumps adding water/flour until the consistency is runny with no lumps.

  4. Add a splash of hot sauce and mix into the batter.

  5. Heat a hearty amount of oil in a pan. To test if the oil is ready add a pinch of batter and if it bubbles and rises to the top the oil is ready. You don’t want to oil so hot that it starts smoking.

  6. Heavy coat the sage leaves in batter and add to the hot oil. Depending on the size of the pan will depend on how many at a time you can add. Be sure not to overload the pan.

  7. Fry for a minute or two or until golden brown and firm. Remove and place on a paper towel.

  8. When slightly cooled they are ready to eat.
